I have both. The American is 17hmr and the Varmint is 22LR. Both are very accurate. Flip a coin, you can't go wrong.

 i just picked up a nearly new cz varmint 22lr at a good price. after work last fri. i installed my simmons 4-16 boresighter scope and sighted it
in @ 50 yards with wolf match extra. took 5 shots to center of 1" diamond.
then for the fun of it i aimed at the right hand corner and shoot 5 more rounds. it was one jagged hole and measures .38 at its largest out side measurement. i was and am impressed with this great rifle, its smooth, well made and fits right.
but like the man said i'm sure you would be happy with either of them, but i sure like a 22lr that shoots like a $2000.00 bench gun.

good luck!
if its worth doing, finish it!

I have both, and I know one set of rifles doesn't make a definitive conclusion, but so far the American is slightly more accurate. I think with a little bedding tweaking, the Varmint will match it, but the American shoots super right out of the box.
Here's the very first 50 yard group from the American, and I called the flyer.

Down here in AUS the CZ's have always been available. hey are commonly referred to as BRNO's pronounced bruno. They came out in number 1's,2's,3's(?) 4's, 5's. I have owned every model bar the model 3 that was to the best of my knowledge a sigle shot target rifle. My model 1 (1951 manufacture)I have had since I was 13,it has a pull away sear and is a mongrel to adjust. The model 2 is almost identical to the current european model, the model 5 (mine is 1958) has a model 2 action and a model 1 stock and barrel which makes it a carbine length. the model 4 was a target rifle with a magazine and I regret  the day I sold mine and have tried to buy it back on many occasions. Not one of the rifles I have owned shot badly, at our local club 50% o f the rifles are CZ/BRNO of different vintageand they all perform perfectly, one of our juniors came in the top 10 in the nationals with a shortened model4. So if you buy an current model you've got a lifetime of reliability and accuracy, I hope you can keep up your end of the bargain.
