Ground pig... seriously!

I just have to tell this, cause it was some of the best pork I've ever had.  We took a pork roast, covered it in montreal steak seasoning, cayenne pepper, and butter (lots of butter)  wrapped it up in tin foil, wrapped up some taters, and stuck em in the ground.  The way I do it is dig a hole, make a big fire, let it burn to coals, line the bottom, cover the fire with dirt, put the foil wrapped food on top, cover it with more dirt, then build another big fire right there on top.  With all the heat, it only took two hours!! No burning, just some of the best roast pig I've ever had.  A little different than the hawaiian style, and no apples, just some dang good food.  It's a little more work, but believe me, its worth it.

i gotta buddy that does the something similar to that. he digs a hole a couple feet down. then he sticks a whole hog in a metal trash can(new) with some butter and herbs and a little bit of water to keep it moist.
then he buries it and builds a huge bonfire over the top of it. then he drinks beer all night....in the morning when all that is left is coals he moves all the coals and i bet you cant guess whats for breakfast. i havent tried it yet but he says it is awesome.

LOL... from the subject line I was thinking  "ground hog".  I had some ground  hog stew once, was a bit greasy and was dark meat but not too bad.
