Check out this link with "unscientific" penetration tests performed.  Found it on the Leverguns forum.  Very interesting.  Leaves little doubt about the effectiveness of the old 45-70.

Very Interesting!!!!!!!!!!     Curious as to what a 30-06, (180gr)  .35 Whelen,  (250gr) and a .338 Win Mag (250gr) would do.

my guess would be about what the 308 did.  Maybe the 35 and 338 would do slightly better, depending on the weight of the bullet.

I read a curious post some time back where the mighty 45-70 was compared to the 458 Win and some more powerful.  The 45-70 loads were Garrett loads and he has a theory about too much velocity, causing a tremendous release of energy upon impact but with the resulting loss of penetration.

It was a good read.  Something about that big slow bullet defies everything the ballistics charts say.  I think that is why I am leaning towards heavy for caliber bullets, instead of light bullet, laser beam trajectory.

I read some simular reports on the Corbon or Garret site. It seems that the best velocity for penetration with hard cast bullets is about 1500 to 1900 fps. At velocity beyond that, penetration tapers off. This fact blows the minds of the high velocity nuts who think more is always better.

For some reason no one ever test a .357 with the bullet it really shines with 180gr hard cast at origanal fps would have had a much more impressive effect. Don't know about the bricks but that jug of water would've been toast for sure. What have we said.... big slow bullets... boom like that.  I,d like to see that with my Maxy. 8)

The US Army did extensive testing a 100 years ago.  After comparing faster, smaller diameter bullets to larger, slower ones they settled on the .45 ACP for penetration and stopping power.
My prayers are always answered,  sometimes the answer is no...........

That's probably cause no one ever buys that kind of load.  I agree, the 357 would fare better with the heavy bullet.  I'm suprised, too, because it is not considered a long range cartridge anyway.

Most hand gun uses for the 357 are self defense and the 158gr HP does real well in that area.  A 180gr would blow right through someone.

For hunting, the 180 would be the better choice in my book too.

As for penetration, I've read no more persuasive story than that of Brian Pearce using the .45-70 on his African trip. He used premium ammo on Cape Buffalo.
He shot a bull and didn't see the cow that was standing behind the bull. He got a two-for-one. The PH was amazed.
