A lot of it tastes like a cross between deer and beef.
The best meat I had.....tried(kudu, warthog, springbok, impala, and some others......I LOVED the Springbok. It was shreaded and then cooked like fajitas with seared onions and peppers. I ate a ton of it. It was a sweet, kinda rich flavored meat. Would love to find a Springbok hunt hear.
Then toward the end of our safari, they made Kudu steak burgers. They were not big burgers but I ate about 6 of them. Also loved their Castle Milk Stout beer.
Tried fresh Kudu liver and it tasted like EXTREMELY gamey chicken livers.....had to choke it down to be nice at the table. Tried some lamb chops and steaks.....really enjoyed it. Had some terrible sausage while we were there.
All this talk makes me want to go back!!! Well....truth is since I stepped out of the plane back in TX....I have been trying to figure out how to get back!!!
