I have not idea if I am being of help at all but Remington new 789 in 375 h&H ahould be around $700. :D

There's a used Winchester Mod 70 in .375 H&H on Gunbroker right now.  Going for $455 at the moment, but not sure what it will end at (link below).  I haven' been looking too long, but from what I've seen most of the bolt actions have been going for more than the $500-600 range.

If you're willing to for single shot a T/C Encore frame and then a .375 H&H barrel can be found for less than $600 brand new.  Light little gun for that round though.

You could probably find a used CZ550 in that range, you can find them sometimes for $700 or a little above new.  Here's a story of good luck, my buddy is a foreman for a construction company, and he was building a house for a guy, well the guy had a .375HH, and asked my buddy if he was interested.  He said he didn't want to spend the money right then, so the guy gets the gun, hands it to him, and tells him, thank you for a great job on the house, this is a gift for you!!  Talk about some good luck!!
