Liver Sausage? Braunshweiger? Anything?

I have elk and deer liver in the freezer.  I will eat it with mustard and onions.  The wife and kids wont touch it.  My wife does like braunsweiger from the deli and will make sandwiches.  Anyone have any liver sausage, or other recipes using the liver?  I hate to eat up all the best parts by myself!!
