What pork for fresh sausage?

What cut of pork do you use for breakfast and italian sausage?

What is pork butt?

I was at a super market the other day and they had a "pork butt roast", will this be sutable to mix with 80% venison?

I don't have any real butcher shops around here anymore and I am having a problem finding pork for sausage.  Wal Mart has groung lean pork, but I would like something a little more fatty so the sausage is not dry.

Pork butt is from the sholder area near the spine.  A hog is split at the spine and then the  "arm " is cut the neck bone is removed and what is left is the picknick and the butt.  the picknick is the portion nearest the foot and the butt is from above the sholder joint and if I remember right it contains part of the sholder blade.

It works great in Sausage.

sorry if I went into too much detail  I worked in a packing house for a while a loong time ago.
