Smoked Bear Ham and Wild Rice Balls

2 pounds smoked bear ham, ground
2 cups wild rice
1 teaspoon salt
1 egg
2 tablespoons flour
1 teaspoon pepper

Place wild rice in a two quart saucepan, adding enough water to cover the rice. Boil uncovered for 30 minutes and remove from heat. In a small bowl
mix egg, flour, and a little water. Add egg mixture to the boiled rice, mix well and add the ground smoked bear meat. Make into small balls and place in a greased nine by nine inch casserole dish and back for about 1 1/2 hours at 325 degrees. Serve with applesauce.
