Whats a good fish recipe for panfish.

i use eggs (or egg beaters if you are having cholesterol issues) and mix with equal amount of skim milk.  dip fillets in that mix and then have a mixture of cornbread mix plus crushed up italian seasoned croutons (any brand will do).  then fry em fast n hot.  excellent eats.  i do the same with pike meat chunked up too.

another is make a little foil boat big enough to handle a bunch of fillets....put a stick of softened butter in with it....and grill it on charcoal with a few wet smoking chips of your favorite flavor........(do not cover that tin foil boat..its just a make shift pan (cookie sheet if you will) that you can toss away without wrecking a good pan on the grill.  when that nutter starts to burn to the foil....your fillets are very done...and smokey.
