Cherry Wine recipe wanted
« on: May 29, 2006, 04:36:17 PM »
About 40 years ago I went to my Uncle Herman's house.  I was about 8.  The men in the house ate first, then the women.  I got to eat with the men.  WOW. My aunt Berthy brought out some cherry wine.  It was almost clear ie (slightly pink), there was a layer of cherrys on the bottom of the quart mason jar,  It was also slightly effervesent.  Boy was it Good.  Does anyone have the recipe?

Thanks
Mike

1- CLEAN Glass Jug.

1 - Fermentation Lock.

4 Pounds of Sour Cherrys.

13 cups of water

2 Pounds of Sugar.

1/2 Teaspoon Wine Yeast.

There is two different ways to make this.  I'll give you both.

Remove pits from the Cherrys and  put them in a big pot.  In another pot bring your water to a boil and pour it over the cherries.  Let Cool.  Strain the juice through a cheesecloth and put in the jug.  Add the sugar.  Mix the yeast in 1/4 cup of warm water and add to jug.  Cap with your fermentation lock.  Let it alone until it has stopped bubbling and settles.  (about 4 months).

This is the one I use.

6 cups of cherries

13 cups of water

3 pounds of sugar

1/2 teaspoon yeast

I put the cherries in the water and boil them for 20 minutes.  After it cools, I strain it and put it in a jug with added sugar and yeast.  I let it go for at least 6 months.

You can choose which is best for you.  If you choose to add chemicals to your wine, that is totally up to you.  I dont use anything but natural ingredients.
