Buffalo Steaks with Jack Daniels Sauce

Buffalo Steaks with Jack Daniels Sauce

should work with most other meats also.


 

Ingredients
6 boneless Buffalo rib steaks (10 ounces each)
salt and freshly ground white pepper to taste
2 tablespoons butter or olive oil

sauce:
1/4 cup minced shallots or green onion
1/2 cup sliced fresh mushrooms
4 tablespoons unsalted butter, at room temperature
2 cup beef stock
3/4 cup dry white wine
2 tablespoons green peppercorns, lightly crushed
1/2 cup plus 5 tablespoons Jack Daniels or other high-quality bourbon
1/2 heavy cream (optional)
salt and freshly ground white pepper
drops of fresh lemon juice
Directions
Season buffalo steaks with salt and pepper to taste and let them rest for 1 hour at room temperature.
Make sauce: In a saucepan, sauté shallots and mushrooms in 2 tablespoon butter until golden brown. Add stock, wine, 1/2 cup bourbon, 1 tablespoon of the peppercorns; reduce over medium heat by half. Add cream and reduce to a light sauce consistency. Whisk in remaining 2 tablespoons butter little by little. Add remaining 1 tablespoon peppercorns, 5 tablespoons bourbon, and lemon juice to taste, keep warm.
Sauté buffalo steaks in butter until medium-rare, 2 to 3 minutes per side. Serve with sauce.

Wow, that sounds really good, and I won't even give ya trouble for referrin to Jack Daniels as a Bourbon.... ;)   
(Only whiskey's from Kentucky can be refered to as bourbon...  Jack is charcoal filtered & distilled in TN....  But I like em both.)

Now all I need to do is take my C. Sharps model 1874 out west & kill a buffalo.... ;D

Sorry,I am from the faaaaar south.and rum be the drink of choice there.Tell me what is a good Bourbon.it has allways been Beam or Jack.and some don't cook well..and some don't drink well.I will tr something diffent.I have been cooking with bourbon for a while now.and trying to get the flavors to blend to a wonderfull taste is some times very hard.and normally find the bourbon to go in at the last minute to have a nice taste..glad you enjoyed the recipe.

This is by far my absolute favorite Bourbon.  I've had more expensive, but never anything better....

Evan Williams, 10 yr old Single Barrel bourbon.  It'll cost ya anywhere from $20 - $25 a bottle.



Like I said I have tried a lot of Bourbons, and to me this is the BEST.

I do like Jack Daniels, Wild Turkey, Maker's Mark, and a lot of the other American made Whiskeys.

Iffin I want something from across the Pond, then Glenfiddich Solera reserve scotch, or Jamison's 10 yr old Irish whiskey would be at the top of the list.  Both of these can be had for less than $40 a bottle, if you find the right place.

well,I looked at several stores.No luck..next time I head to town I will have to look in some other stores..10 year old single barrel has a good ring to it..will keep lookin.thanks..

Callaojoe,,,,,,,,I had to special order the single barrle evens williams,the tops shelves around here are kinda bottom shelf else where.And it came in last week.I sampled for several nights.that is good stuff $21.45 for the bottle they gave it to me at sale price for not haveing it.and it came in the christmas gift set with a Glass and a silver looking jigger that sits on top of the glass that you fill with ice and pour the bourbon in.when its cool dump the ice and tilt the jigger in the glass are you can leave the ice in..pretty cool set up..thanks for the tip..

Glad you liked it.  I have yet to find anything I like better...  Some may be just as good, but none better.
