We've hauled a lot of moose out with 300 Honda's of various vintages.
So, a 250 should do fine for deer.
I just picked up a used 350 Yamaha Big bear myself.
Did some internet research, seems like a solid machine.

i have a 400 arctic cat , 4x4 large enough to get over fallen logs at least the ones i would drive over , enough power to pull or drag , room to carry stuff , still small enough to get thru. woods , a comfortable ride , had a 250 and sold it , it would not pull thru. creeks and up banks as well and felt less stable , i'm in my 50's and don't want to use a lot of body english to maneuver quad just want a ride !
If ya can see it ya can hit it !

Well I finally sold my boat so I put 60% of the money in a CD for a new truck 4-5 years down the road, and with the rest bought a new (2007) Polaris Sportsman 500.  It's fuel injected, has engine braking on all 4 wheels, and only goes into 4x4 when the rear wheels slip 1/5 of a turn.  It has all the bells and wistles including aluminum wheels.  I figured I'm in my early 60's and this is the first and last ATV I will ever buy.  I didn't want to be saying I wish I would have bought a bigger one, one with a winch, etc.  I've rode it on some trails in the GW national forest in VA and twice on the small farm I hunt.  It's more quad then I started out to buy but it rides like a Cadalic because of the IRS suspension and the weight. Put 130 pounds on the rear rack, 35 on the front along with my hang-on stand and ladder sticks.  Put her in 4x4 and just go up the hill to my stand site like I'm riding on flat ground.  I've cleared some downed trees on the farm and will be able to get the ATV within 150 yards of any deer I drop.    I plan to go with my son and some friends to the Hatfield & McCoy trails in WV next spring for several dys of trail riding.  It's great being a kid again at 61. All I need now is some deer blood on the rear rack.  ;D
Don't give up, Moses was once a basket case.

Never "settle" for less.  Sorta like storage buildings, you decide a 8'x12' will do, double it to be sure.  There's not that much different in price between a 250 and a 400, provided you don't get gadget happy.  A really good, simple machine is Suzuki's Eiger.  I know of 1/2 dozen that have been go anywhere, do anything reliable machines for years.  You may not think you'll ever need the power of a 400 class machine, but its better to have than to want.

I like my new Rancher 420 4x4.  Not too big, not too small. Just right.
