Made some great duck yesterday, probably the best I've had.

Took three ducks, plucked, winged, and tailed em, so had the full body and legs.  Sealed them up in salt water, and let them sit for a day in the fridge.  Took them out and rinsed them off, and then made a butter with diced hot chiles, garlic, ground cloves, white pepper, and paprika.  Smeared it in and out of the ducks, and let them sit covered another night in the fridge. 

Put them in the oven at 350 degrees, went to the store to get some egg nog (yes!! its back!!) when I came back, the oven was off.  ???

Turns out that about an hour into cooking, someone decided by habit it was good to turn the oven off.  So an hour at 350, then got turned off and sat for an hour in the still hot oven, when I found them like that, I uncovered them and put the oven at 450 for 30 minutes to crisp the skin a little, and make sure they finished cooking.

Now I don't know if the oven getting turned off helped or not... but they sure were tender and good.

Ate them with some garlic mashed taters, and egg nog of course.
