I know folks who eat them but I'm sure not one of them.

When I was a boy I got down into the water of the stream that flowed past my house and caught them by hand by carefully lifting up rocks. Later when wanting them in larger quantities as fish bait I'd seine for them. Dad built a specialized tool just for the job. It had a long handle like a shovel and the frame was welded heavy wire in a square "scoop" pattern about 18" or so wide and perhaps 4" high. The front end sides were rounded off a bit on top. It kinda sorta resembled a shovel I guess but had mesh wire. You'd get into a shallow water ditch or other area with crawfish in it and just scoop up the bottom with it to catch the little buggers and it seemed to work ok and was usable by one person whereas a seine really kinda needs two people.

Catching them as bait is the only way we ever did it. I've seen commercial traps for catching them and I guess they'd work as well.

If there is a size or quantity limit here in Bama I've sure never heard of it and I can't imagine how it would be enforced anyway. Before I build my pond we saw some really huge ones in the swampy land there and now that I have the pond there are crawfish holes all over the banks so they are doing well I'm sure. We'll see one from time to time. Once my young fish grow up I'm sure they will enjoy the crawfish as well.

A seine is a net, look it up on any search engine and you should get loads of info. It's normally used for catching fish but works for crawfish as well.

In last month's Field and stream I believe they had a  plan for a quick crawdad trap: Take a two liter Pepsi bottle and cut it in two just below the shoulder. Put your bait inside along with a small rock to keep it submerged. Invert the spout end and stick it into the bottle, and staple the thing shut. It will look and work somewhat like a minnow trap. Punch a small hole in it to attach a length of nylon string to it, and toss it into your local stream, pond, or whatever...

I take a strip of bacon, about 10-12 inches long, cut it into four pieces, then tie a piece in the trap.

Like GB, as a kid I caught thousands of them by hand by wading with a lantern at night.  I remember a recent trip to Ute Lake in New Mexico where several of us caught three five gallon buckets of them in about three hours one night by flashlight.  They averaged about 4 -5 inches.

I cook them in a large pot, bringing the water to a rolling boil, then add two lemons sliced into  eights, along with "Old Bay" (brand name) crab boil. Put the live craw-fish in the boiling water and let them stay until they turn red (reddish-brown).  Sometimes, much like cooking crab New England style, I add potatoes, corn and onions and let them cook, then add the craw-fish.  Once done, drain the water off, place the mixture on a platter and serve.

I have eat them Louisiana style (tear the tail off and suck the insides out) but I am not crazy about doing it that way.  I usually tear the tail off, strip it out and eat it, it taste much like lobster, and makes a good meal if you like seafood.

Superdown,
You can buy Crayfish traps. I had a long thread and timed out.
Best bait is dog food with lots of grains. This is attractant ooze out of trap.
Bait also with Herring or Sardines. this feed them when there in.

I like to peel the tails off and clean them. make pancake batter and deep fry.

Clean tails and put them in Cocktail sauce for a week in refrigerator. the eat with a fork and crackers.

Hope this helps. If you have any Questions Im me and i will be happy to help you.
