I'm considering the same two rifles as you for a purchase later this year, and have the same quandry in making my choice. I own several Model 70's, and have been able to make each one shoot quite well, but it has taken effort to do that. I don't own a Kimber, but have done accuracy work on a few, and found them to be a bit quirky. Some shoot quite well right out of the box, and some throw fliers that make you crazy. I have also been successful making them shoot however.
All in all, I think that it's just the usual crap shoot to get a rifle that shoots well out of the box. I think I will wait until the Model 70's are out, and some gun writer prints up a review for us to read before making my decision. At this point, I'm leaning toward adding to my collection of Winchesters, and resigning myself to break out the bedding tools and Acraglass.
Best of luck with your soon to be .270!
