Putting your finger between the hammer and frame is a good way to test the trigger; as others have said, don't dry fire it.
As far as recoil is concerned, I had an unbraked 375 H&H Mag. barrel for my Encore. For shooting off the bench, I went to using a lead sled though off hand it wasn't bad. I took several large African animals with it. Due to the recoil, I got bitten by the scope several times. If you're going to use an unbraked 300 Win. Mag. barrel on your Encore frame, make sure the scope you use has plenty of eye relief or it will bite you. Personally, I would go with a braked barrel and just make sure to use ear protection.
For stocks, I prefer the composite thumbhole versions. I just bought forends for all the barrel profiles I had or thought I might have.
As far as durability of the Encore is concerned, they are very durable (I shoot mine with a variety of high intensity cartridges) and if you manage to wear one out, last I knew, T/C would give you a new one.
