I am in the same boat about doing a 6.5 build. I thought about doing a 6.5 WSSM wildcat, but the bullets take up to much case capacity and there might be feeding problems and I didn't really want a Grendel. So I am jumping up to the AR-10 platform. It is about a pound or so heavier, but this is going to be a target and stand rifle anyway.
Going to the AR-10 opens up a lot of doors for you, caliber wise. Here are some of the considerations for calibers: 6.5 Creedmor, .260 Rem, 6.5x55, 6.5-284, 6.5x47 Lapua, or 6.5 WSM (This would be a little faster than the 6.5-284).
