Lyman (commercial maker of lead bullet moulds) spells it with the U so I do when referring to that type of thing. Otherwise, they seem to be two spellings for the same thing.

In the USA it's a
mold
.
In the UK it's a
mould
.
As noted there are exceptions.
I bought my 1.125" ball mold from JT in the UK, so technically my
mold
is a
mould
.
