Wild leeks (ramps)
« on: February 07, 2009, 01:23:40 PM »
Does anybody have a way they use to store wild leeks/ramps.  I was considering maybe trying to pickle some like cocktail onions or garlic, or try dehydrating them after finely chopping like minced dried onions. Just wondering if anybody knows something bout it.

Let us know when you will be chopping the ramps so we can stand a good distance up wind, Also during the dehydration process be prepared to run the neighbors out.
I would think both procedures would work just fine.
However, I would consider the effects on any person after eating them, Most folks will tolerate a ramp eater for several days in the Spring BUT all year, prepare to be shunned

We use to clean and cut the tops off, put them in quart jars and freeze them.

Yum! Yum! Have not been to a Ham and Leek dinner for Years (moved away). They come up with the crocus's (croci?) Most good patches are kept secret as to location. Horsefeathers.

Went to a local restaurant that has great homemade food & soups last week, and on the salad & soup bar was homemade leek & sausage soup. HMMM, HMMM, GOOD.  It was totally awesome. Never did get to eat my meal because I filled up on leek & sausage soup. I sent my compliments to the chef. I'll have to try this soup combo myself. I've made leek & potato soup before but never thought to add in Italian sausage.
Our wild leeks will be popping up in a few weeks. Can't wait.
