would love to hear from anyone that plants and eats parsnips regularily.what time of year do you plant them and how do you care for them. they look like they would be a nice addition to turnips and taters as a winter staple here in sw mo.

I have planted them  off and on over the years, usually the hollow crown variety.I like them peeled and sliced lenghtwise, lightly floured and fryed in a skillet.I left some in the garden over the winter one time and the next spring I pulled some huge roots from the ground.I have read that they make an excellent wine.

  I've grown them...  The seed has to be fresh, and it's a bit hard to get to germinate.  I plant in the spring, and in the fall i cover them up with straw.  Leaving them over winter takes the bitterness out, and really makes them sweet...

  I REALLY like them, but i've found them a bit hard to grow...
