Fishing around Fort Myers

Will be there the week of July 4th.  I would really like to fish for something but know nothing about the area.  Any thoughts?  Always wanted to catch a Dorado, but am open to anything...even fresh water if salt does not pan out.
Be honest with yourself.  Can you guarantee you would hit a paper plate at 250 yards...100 yards...50 yards?  Then you have no business replacing the plate with a live animal.

Lived in Ft. Myers and worked there in a bank in the '70s.  We used to fish the tidal movement around the bridge, now bridges, to Sanibel Island, the tidal movement in Redfish Pass and Captiva Pass, and on to Boca Grande: shrimp, pin fish on heavy jigs.  Also used to run the buoys and flip hair jigs with a pinfish on for cobia, channel markers for triple tail.  Old pilings around the river mouth anywhere for sheeps head.  Grass flats south of Punta Rassa (the bridge) for trout.  Don't know a lot about fishing there today--been a few years since I've wet a line in that area, but the fish should still be there.
