Questor, here is the way we do it in NC. Pork shoulders cooked slow and low over wood coals, I use Hickory, Apple, and Oak. No rubs, let the smoke flavor the meat, but sometimes I like to put in drip pans filled with apple cider. I make a mop sauce with apple cider vinegar, catsup, apple juice, red pepper flakes, black pepper, cayenne pepper, and lemon. I also make my BBQ slaw with this sauce. Most folks around here like their BBQ chopped, but I prefer mine pulled. We use a 250 gallon oil drum that has been converted to a cooker. For the last couple of years I have had a been using a store bought smoker with a side fire box if I am only cooking 2 or 3 shoulders. I have been very happy with it.

There's nothing as good as slow cooked, smoked pork shoulder.  I've had something similar to yours with a vinegar bases sauce and it was the best!!  I cant get nothing like that anymore since I moved to Minnesota from SC.  I will sure miss the great BBQ in the Carolinas, they have the best!

Any of you north click boys ever swing by Ayden and eat at Bum's BBQ? The grub there will make a puppy pull a freight train. Had the privilege of eating there a few times when I was sattioned there. hope to make it back some day

Now that's BBQ!  I guess it's what we're raised on.  I've always been disapointed when I stopped to get BBQ in other states..The biggest was at a world famous BBQ place in Tennessee.  The sauce was just slabbed on the greasy tough pork and you got a warm piece of meat with ice-cold ketchup sauce slathered all over it. The people were lined up out the door.  I couldn't understand it?? Yuck!  There is nothing like Carolina BBQ! If you are ever in Batesburg, SC, try Shealy's BBQ.  They're world famous and many US presidents have stopped there to get a plate.  They have chicken, ribs, cracklin corn bread, the best greens you'll ever find, and even chitlins if you know what they are.....Nothing like Carolina BBQ

I shouldn't be reading this while at work in the afternoon  :o   :'(
Of course, having always lived in WI, I can only imagine how good that BBQ is.

I'll slow cook sometimes (hope to do more) but nothing like you guys describe....man, I'm getting hungry  ;)
