What would be a good twist rate in a 6mm-284 for 65 - 80 grain bullets. I'm thinking some where in the area of 1 in 12.

A 1 in 12" twist is a good choice in the 6mm bore for bullets up to and including 90 grain projectiles. Thay was the original twist rate in the Remington 722 in .244.

Here's the twist rate chart for a 6mm/243:
.243 / 6mm
1:15 up to: 70 grains
1:14 75 grains
1:13 85 grains
1:12 95 grains
1:10 105 grains
1:9 over 105 grains
