Fried a back strap last night.
« on: March 08, 2010, 05:53:54 AM »
Last night I fried the back strap off of my recent kill.  I sliced it thin, dipped it in egg and milk, rolled in bread crumbs, and fried until done.  I forgot how good that stuff was.  It was a little tougher than a farm raised pig, but it tasted 10x better.

Lately I have been either pan frying or grilling chops and steaks in Sweet Baby Rays barbeque sauce; now I'm going to have to hunt more hoggies............gosh!

I find they taste 10x better than tame pork.  They may be a little tougher if not cooked long enough.  I may smoke a ham this weekend.

When you wrote Fried, I was thinking Turkey fryer.
Inject the back strap add a little salt and pepper and lower into the fryer.  Have not tried it but that is what ran through my pea brain.
But what you made sounds good.  Now i want stir fry.

Thin-sliced backstrap is one of my favorite ways to cook 'em.  Just add mashed potatoes and fried okra.  Haven't tried the egg and milk before, guess that's next!

Deep fried works pretty fair with the jelly bean sized pigs, too.  Me and my door gunner/spotter cooked one in his turkey fryer last fall.  Not bad at all.  This one was skinned so it browned out a bit too much; next time the skin stays on.

I use the egg and milk so the bread crumbs will stick.  You could also roll it in self rising flour and fry it like chicken I suppose.  Thats how I cook my squirrels, but you have to boil them for about 30 minutes.
