Double crust squirrel meat pie, YUM.

 I was asked to post my recipe for double crust meat pie so here goes.
Ingredients:  3 squirrels cut up
                    several diced potatoes, a stalk of celery, several diced carrots, 2 cups peas, some sliced onion.

Pressure cook or boil squirrels till done.  Debone meat careful to get only meat and no bones, bb's, or bullets.  cook the squirrels with onion and a little garlic, black ground pepper and salt to taste.  Strain and save the broth.
Cook veggies separately till done.  Hand shred the squirrel meat and combine with the cooked veggies.  Next put
the mixture on your bottom crust (I use the store bought ones cause it's quicker and just as good) and add some of the strained squirrel broth to just moisten the mixture.  Put a top crust on and seal the edges poking some holes in the top to vent.  All the above should make two nice meaty pies.  Bake on a foil lined tray at 400
degrees till the top crust is brown.  Serve with home made chicken gravy to ladle on the pie pieces.  Let your pies
sit about fifteen minutes after removing from the oven so they slice better but no big deal.  Serve with some crusty italian bread and watch the smiles appear on everyones faces.  I also use cooked squirrel meat to make
spaghetti.  The guys at work really liked that spaghetti too!!!!!

Good luck with your trial of this recipe.  It is really easy to make.  I'm Pennsylvania Dutch and my mom used to make the same thing with chicken all the time so I just tried with squirrel and it was great.  Add anything else you
might like cause this meat pie recipe is not chiseled in stone!LOL  Just don't forget the gravy!!!

My mother would make two crust for the top. She would cut up quarter size chunks of sharp chedder and put between the double top crust. added a good flavor. ear

Sounds interesting!!  I'll have to give it a try.  Was that cheese added for squirrel meat pies?  I know it would be good with chicken meat pies cause of all the recipe's with chicken and cheese floating around.

She used it with chicken and beef. She would usually make dumplings with squirrels that weren't friers. ear
