Preserving an egg.
« on: May 12, 2011, 03:00:01 PM »
My son asked if it were true that if you boiled an egg for 30 seconds ( I assume you put the egg into the already boiling water) if it could then be kept out of the fridge or cooler for up to 6 days and be used like a regular "raw" egg. (slightly cooked against the shell...) Has anyone heard of such a thing? I know a fully hardboiled egg can be out for a few days but I had never heard of this method for keeping an egg to be used/cooked later.
Thank you, thejanitor

I have read that you can keep fresh eggs in a cool dark place for weeks without refrigeration with no special tricks required.

Thanks for the reply.
Ok who wants to be a tester for the group?   C'mon don't be a "chicken".  ;)

I will have to look into that. Wouldn't want to be way out in the sticks and get sick because I didn't test the theory first.

If you read any of the books by Lynn and Larry Pardey on their life in cruising sailboats, they claim that coating each egg in Vaseline will make them last without refrigeration.  The idea is to keep air from going through the shell.  Never tried it myself, but these folks were doing this without power and such 40 years ago and are still going strong.

I did some reading on the internet and it says once an egg is refigerated it has to remain refrigerated so it wont work with store bought eggs.

Thanks, so if a person got some farm eggs on the way out of town that were layed that day you should be good. I know a few families with layers, could maybe do an experiment this summer.
Thanks for the replies.  thejanitor

old egg preservation recipes found on line.

My folks used to keep eggs for up to a year in the refrigerator (from our own chickens)
I kew a couple that lived for 2 years on there 40 foot sail boat in the pacific, the wife related how they kept eggs perfictly in the ballast sand in the fiberglass keel they bought fresh eggs along the way, as long as the eggs are fresh off the nest and the hens mucous is not washed from the egg they keep well without refrigerating, so having some chicken dropping's on a egg  is'nt a issue as long as there not washed (removing the protective mucous), My grandmother used to wash and sort eggs and coat useing waterglass for the egg/cream truck to pick up.(hold over from WWII)

When I hike I use the egg cartons you buy for carrying eggs. They are plastic and help keep the eggs from breaking. I use refrigerated eggs to put in them when I start and they will keep the whole week I am out. They will probably keep much longer than this.

When a chicken lays an egg it has a protective coating called a bloom. The coating is washed off easily. I have chickens. I never wash the eggs until I cook them, if I cook them. I eat some raw. I never put them in the refrigerator. Many times they lay in cartons on the kitchen counter for weeks. I have never found a bad one. I wouldn't try it with washed eggs from the store.

If the hen has been with a rooster, will the room temp egg start turning - "hatching"?

No, a hen will lay an egg a day until she has about 13. Then she will stop laying and start sitting. It's the warm body of the hen that starts the incubation possess. That way they all hatch at the same time.

Yep, when the hen starts setting she will lose most feathers on her underside for good egg contact ond only leave the nest for brief periods to water and feed. The chicks depend on thier own ability to feed and must be very close in age for the last to hatch to make it away from the nest with the others.  ear

While growing up we never refrigerated or cooled ANYTHINg for camping trips. Hot dogs were simply left in the pkg, eggs were cracked and poured into an olive jar. Eggs stay seperated in the jar, just pour them out one at a time as you want them. WE took reg meat too but nothing ever spoiled in the couple of days we were out. POWDERMAN.  ;D ;D
