Looking for another recipe old time.

i Friends

 I sure wish I had paid attention to my Granddaddy when he made these recipes. Hog head Cheese, press meat, Souse meat recipe. The one Granddaddy made his with used weights in the last steps.

A sausage recipe book should be a good start, that or a canning and preserving foods recipe book. ear

  Do you remember if your grand daddy used the jowls for his head cheese?
  Next hog I butcher, I'm gonna try head cheese, but I like jowl bacon too.

Yes Grandaddy did use the jawls. It was my job to take the heads to him after we finished butchering. He just removed the usual parts.

  Pig hocks make excellent head cheese, i've used them for many years...
