smoking some meat

Got 16 sticks of summer sausage in the smoker right now and two turkey sitting in brine for the smoker tomarrow. YUM!

Oh man a brined turkey smoked up right there's no finer eatin!  Except maybe a big ol' deer ham done the same and cooked all day slathered in bacon!

I've worn out several smokers but like the one I have now (Brinkman Gourmet) so well I just keep buying parts for it as they rust out. In fact rat now I need to order a new fire pan and bottom for it but it still works nicely and it gets used regularly around here.

We smoke most of the salmon we catch up Lake Ontario.  Its about the only way I'll eat it.  Aint nothing better then smoked venison summer sausage.

Funny Larry, Me too!!  BUT thats hasnt been for many years...
 
Just Thursday I was talking to one of the people at work who is heding up to Polaske NY for the first time. He has a brother in law with a charter on the lake.  One of the FIRST things I told him was the smoker smells when your in town!! I recomended he "swap"one of his first fish so they would have "snacks"for the weeks trip!! I DO miss that!

just did 50lbs of trout and salmon in the smoker yesterday. Im making some venison itailian bratts today. Ive got enough out to do 25lbs. My wife doesnt like them smoked so i might just smoke half of them this year. Ive got one more 25 lb batch of summer sauasage to do and then i have 4 small hind quarters im going to make into venison hams. Ive never done a ham yet so its kind of scary doing 4 when i dont know if they will turn out well. After that the smoker will get retired till next year. Ive got probabaly 75lbs of summer sausage in the freezer now and with this last batch will be set for the year. Problem with all of this stuff is ive no doubt given a 100lbs away this year allready. Youll find you have alot of friends when the summer sausage is in the smoker!!!

Roger that! I have two places near me that make me sausage, I get double smoke and triple smoke and we eat it all here at work. But we have three guys doing it so its not just one. But I hear you when people know its in our "shop" they come from all ends of the hospital!!

I saw a advertisement a couple weeks back that really got me thinking on it. I always thought it too much trouble. Then the wife was watching food network and a chef on there made a smoker out of junk in a junk yard!!! It's actually worked!!!

Best of luck on the hams, I am sure they will be delicious!

I actually smoked a carp and it tasted darn good.  It was an experiment, but I'll do a couple more next summer.  My smoked catfish is also delicious eating.

Smokeing "off flavor" pond raised catfish was the only effective method of makeing them edible that I ever found. I used some semi sweet white wine with a little soy sauce mixed in and put the fish in a pan with a small amount of the mix in the bottom and basted the fish a few times with the pan sauce. ear
