My brother in law and I are considering building AK's from one of the parts kits. I need advice on what to look out for and/or who offers the best kits. I would also like advice on what receiver to get and how difficult the 80% receivers are to finish. Any other advice is appreciated thanks.

Today With kit prices @ $300 its pretty hard to justify building 1, you may just want to buy an AK. Look into the Soumi homebuilder kits from TNG , that looks like fun and a pretty good deal too

make sure your kit and reciver are matched for easy build. Make sure you have enough US built parts to comply with ATF regs. Make sure bbl is long enough if it is a take off supplied with the kit . If not then weld a flash suppressor on to comply. Shotgun News has articles on building them and some adds for kits and parts. I'm not into AK's but guys at the range who are like the polish guns from kits.
