The foods eaten at the seder all symbolize different parts of the Israelites’ escape from Egypt!
-Karpas is a vegetable (like parsley, cucumber, or celery) dipped in saltwater. This symbolizes the sweat and tears of the Israelites when they were enslaved and the season of spring, when God redeemed His people.
-Zeorah is a piece of roasted lamb that reminds the Jews of the lamb God told the Israelites to prepare the night before they were freed from slavery.
-Beitza is egg, which is boiled or roasted, representing a second offering that was brought during Temple times. This symbolizes mourning. On Passover night the Jews mourn the loss of the Holy Temple.
-Maror and hazeret are the bitter herbs and bitter vegetables which remind the Jews of the Israelites’ bitter lives as Pharaoh’s slaves.
-Haroset is a mixture of apples, nuts, and grape juice—a reminder of the mixture that the Israelites used to make bricks for Pharaoh.
