Branding Momma Cows Saturday

Saturday should be a productive, fun day. Friends are loading up their best horses and trailering over to help brand a bunch of momma cows.

A fun time with some good guys, sortin cows, watchin good cow ponies outwit, and out maneuver, ??? smarter older cows in a big open corral. This is where my horse "Nacho" is at his best.

So, don't you need to be branding Goats for Mesican food? Here at the local livestock auctions, all goats are bought and shipped to the largest county in Mexico.......La County. Beef and Pork be for BBQ. Goat be for Tacos.

Have fun on that cuttin horse Dee! I rode one as a kid one time, and it jumped right out from under me.He was ready, but I  wasn't.

I've eaten goat BBQed, but beef is what I want in my tacos. They also make'm with chicken, and pork.

As far as a "cuttin horse", their an interesting ride for sure. Mine ain't a cuttin horse in that sense, no arenas for us. He's a good sortin horse, and you can herd, heel, rope, and drag calves with him.

How's the grass over on your side of the cap? After the late August and early September rains here it's recovered nicely. The cowboys should be in better shape for feed this winter.

I had tacos for supper last night. My daughter made them and they were pretty good but her mother's are better. Beef of course, no foo-foo tacos round this house.

Enchiladas ,Tamales my favorites. Not that canned crap Hormel sells.Tamales should be wrapped in a corn husk ,not waxed paper.

When I was young tamales came wrapped in corn husk in the can. Sure tasted better in those days than what you can get now. I used to like them, not so much what comes in a can now. I've never had them other than what comes in a can.

I like tacos OK but prefer burritos cuz of the soft shell. I'm not much on the crackling hard shells of tacos. I guess I've never eaten a store bought one of any sort from the Mexican type restaurants. All I've had are made at home and use shells from the store.

You can buy real tamales from Mexican families here. Made in their kitchens the old fashioned way, wrapped in a corn shuck.
A lot are from the meat scraped off a cow head with a hoof knife.

Used to buy the tamales from a
old gray haired stooped over meskin
woman that brought them around
every Friday. Pork or cheekin
No other choices. They were beyond
criticism. She'd give you a little
bathroom mouth washing type cup
full of your choice of green or red
sauce. Made like I would make it.
Starts out kinda blah yah, and
gives a little burn in the back of your
throat. Just right. I never figured out
how old the kid was that brought her
around. No way was he old enough to
have the mandatory drivers license
and insurance. Probably 12
When I started buying they were 6
a dozen. Last time they were 8.50

Had a full time woman once that
 could make great tamales.

We bought them from a neighbor's wife until she quit making them. Good price and excellent tamales. Then a gal that started working at the floral shop with my wife made them and we bought from her. She made two kinds , regular Mex and Gringo. Only difference was in how hot the pepper was and to be truthful I didn't even want to ty the Mex one's. Now we buy frozen one's from Allsup's, a chain of quick stop gas and goodies joints and the regular one's are very good and the green chile one's are even better. I have never had a tamale in a cafe that was fit to eat. Mostly masa and dry as dirt.

Note to Graybeard: Use soft tortillas for your tacos. Taco Bell has that variety and they are good. I prefer the soft ones as they don't break and fall apart when you bite into them. The cooks in my bunch make them both ways when we get together because some prefer one type over the other.

Its the Hormel brand in a can wrapped in wax paper that taste so bad. They ended up as dog food. Allsups does make some good ones, or they did once.
