Hello all, Just got back from a tuna fishing trip out of Venice, La. Caught a number of blackfin and yellowfins plus a couple of decent wahoo,Seas were running about 4-6 feet,(only one got sick!) Now a problem, My wife nor I have ever cooked tuna.(Always said if it were't fried it wasn't fish)We've been told that grilling is the way to go. Anyone have any favorite recipes that they're willing to share? thanks, micky

Sliced thin RAW with Wasabi. Or

Lay lettuce leaves on a broiler pan. Place tuna steak on lettuce. Squeeze lemon on top of steak along with a thin slice of butter also GRIND  up some pepper corns. BROIL FOR ABOUT 10MINS ...........OTTO

ottomatic, thanks, we"ll sure try the broiled on lettuce. I gave a neighbor some and he sent back over a piece 'blackened', it was delicious. regards, micky

Another good way to cook tuna is on the grill.  I brush it with a mixture of fresh lemon juice and olive oil with just a hint of garlic powder.  Cover and let it set for 45 minutes-one hour.  Get the grill hot and cook about 6-8 minutes on each side. ( you may have to alter the time if your grill cooks HOT.)  If you can get it, a few chips of mesquite wood added to grill gives it an outstanding flavor.  I like to wet the wood before I put it on the fire to get more smoke.  I cheat a little, I use a gas grill............. :D

We do tuna similar to rockabilly's , but marinate 1 in. thick steaks(some call them butterfly steaks) in Good seasons Italitan dressing with some lemon juice added for about two hours. Then cook on a hot grill just enough to get the pink out of the middle say 5-6 min per side. Definatly add the mesquite chips to the grill, it"s just not the same without them. Most places that sell grills, also have the chips.
