I want to use Remington Hevi-shot 3" #5's magnums.  Should I use the choke that came with my Winchester 1300 Black Shadow with a constriction of .689 or should I use my HS Industirs Undertaker with a constriction of .665?

:D You could try patterning each of them to see which you like the best.

There are lots of choke tubes to choose from that are made specifically for Heavy-Shot. I don't think that the Undertaker is one of them. Better check to make sure it's safe.
