Which model is most versatile caliber wise? Contender Encore or G2

Encore will do anything the others will but will also handle the heavier cartridges that they won't.

The Encore will do what the others will, except you will sacrifice weight for the additional higher pressure cartridge availability.  The real difference is in weight, size and grip angle.  So it comes down to what you are looking to do with it.

Actually the Encore will shoot rimfires also its just a matter of swapping out the fireing pin assembly via an adapter thats offered by Bullberry and VVCG and Eabco also has them and I believe MBMCO offers an offset barrel that doesn't require the adapter to shoot rimfires... of course this makes it a custom option.
