Leo, tis not a difficult task to perform. Many articles and books walk you through the process. Key things to keep in mind are:
a) good sharp knife with slow incisions/cutting and watch out that you don't cut yourself in the process
b) take care and don't puncture the entrails
c) be in good physical shape if you have to drag the carcass for any distance
d) if hunting on private land, DO NOT leave the entrails lying exposed in an open area for all to witness long after the fact
Basically once you make an incision down the belly, gently remove the entrails, helps to have surgical gloves though I only recently began using these, and cut away any "stringy entrails" that remain attached to the carcass.
