Need advice on an Encore Pistol

I have currently purchases a stainless encore frame with pistol grips.  My original intentions were to build a 243 rifle for my son.  I have since changed my mind and I am going to build me a pistol to take deer hunting.  I have a 30-06 encore rifle I will convert for my son.  My questions are about the barrel and the scope.  I have read a great deal about the 7mm08 in 15" on this board and I am leaning toward that barrel unless someone can tell me about something more effective.  Also what is the best scope for this gun. (brand, variable or fixed?)

you can't go wrong with a 2x7 burris. 7mm08 is a great deer caliber in the encore. one thing to consider about encore chamberings is that you can only burn so much powder in 15 inches of barrel. around 2500 fps is the limit and still be accurate.  BRU

Love my 708, good power, accurate, low recoil. Scope depends on your type of hunting. I have a Leupold 2X and would't have a problem taking a 200 yard shot. (from a good rest) There have been times when I wish I had a variable like for target shooting and the occational long shot but for general hunting the 2X has been fine so far. Have heard good things about the Burris and Bushnell Elite line also.

7mm-08 is a good choice.  I shoot 308 and love it.  As far as scopes go I have one from Thompson 2.5-7.  I rarely change my setting of 4.5 on the scope unless I'm playing with powder charges and want minute precision I go to 7 power at close range and use a very small target.

In my two Encore 7-08 barrels even the RP factory 140 grain loads clocked over 2600 fps. Hornady light mag adds another good 100 fps. You can generally get 2600 fps from reloads but you're not going to match the Hornady LMs at safe pressures. I personally consider the 7-08 to be the perfect deer round.
