I generally don't use a guide service for whitetail since I live here,  but one I did hunt with this season on an invite hunt :-) , and felt did a good job with alot of big witetail is the Venado Grande Ranch south of Bracketville, Texas.  They do have a web site, although I don't have it book marked.  it should be easy to find their site with any search engine.  Good luck.   PS,  they have alot of hogs too.

Funny you mentioned Venado Grande. I am pretty sure that is the ranch where my cousin, Larry Miles, guides deer hunts. He has been guiding out there for several years. Here is his info in case you want to ask him some questions:

I looked all over for the card of the guy I hunted with at Venado Grande, and can not find it.  I think it may have been your cousin as he lived in Nixon.  I was suppossed to hook up with him and come out to his place for a load of mesquite wood for the smoker,  ubt can't find his card.  We also hunted with Micah Strelsky while there.  Thats  a nice place with lots of big deer and hogs.  Would like to go back sometime if I could afford it.

Check out the -B Ranch thread in the Exotics hunting and game ranching.
They seem have a lot of info on white tail hunts.
