I have zero experience with some old Tuft Washington Turkey but I have killed more than my share of Alabama Turkeys. We cook then just like a store bought bird and they are fantastic. NEVER had to chop and or dice a wild bird in my life. I call my birds Yelp Yelp not Caw Caw. Smile and be happy with your bird eat and enjoy it always.
