what ripens tomatoes?

I understand that age, temperature and sunlight effect the ripening of tomatoes.  But does soil nutrients etc... make a difference? Or does it only effect size and numbers of tomatoes?

My other question is;  if sunlight helps ripen tomatoes on the vine then why put them in a paper bag (late season etc...) for ripening?
