Where do I start my little boy out? I started with a Daisy Red Rider, is this still the starting point of choice 30 years later?
5 years old and interested, but he would only use the rifle with Dad's close supervision.

As you said the Red Rider, or one of its variants, still makes the trick for young boys. Very important points to observe are:
1. Continuous Direct SUPERVISION from Dad. This can't be emphasized enough. Recent accidents and consequental death of kids using airguns are directly associated with careless parents. Enjoy your kid, they grow too fast!
2. Always wear adequate EYE PROTECTION.
3. Select a safe area with a good backstop. A large carton box filled with crumbled newspapers makes up for a good silent BB's trap. Never shoot against hard surfaces, BB's may and would ricochet creating an unnecessary hazard.
4. Teach your children responsible safe gun handling and good shooting habits. Always keep the gun under your custody.
5. Probably need to trim the buttstock shorter to fit the kid properly. No big deal with an inexpensive airgun, and much better than a non-fitting gun.
6. Be SAFE and enjoy the time invested with your son. Both of you would share such memories for the rest of your lives.
