Venison or Elk Sauerbraten Recipe?

:D Howdy!  Anyone have a good recipe for Sauerbraten made with venison, elk, bear, etc.? I suppose you could just substitute for the beef roast in the recipe. Anyway, if you have a good recipe for Sauerbraten, I sure would like to see it.  Thanks!
