I know that usually a slower powder is used to load 3's, they carry a heavier payload, but wouldnt the 2&3/4 get there with more energy, however fewer pellets?

Yes, a 2 3/4" load can get there faster.

I use a lot of the data from Hodgdon's web site www.hodgdon.com for Longshot powder and 1 1/4 oz. loads. With Longshot powder and a 1 1/4 oz. load you can get 1330 f.p.s. to 1440 f.p.s.

Longshot is a fast burning powder and it burns clean too. I use a lot of 1 1/8 oz. loads for sporting clays, with Longshot powder. It has become an all around powder, for me. I wished they'd make some waterfowl loads for steel shot.

Most of my loads are for crows, doves, pheasants, grouse and sporting clays.

Something I should mention is that if you're looking for a load for turkey hunting, speed isn't an issue. Since you're shooting at a stationary target leading the bird isn't neccesary, like it is with wing shooting.

The only difference I can see would be with steel waterfowl loads. Here the 3" has an advantage, but HeviShot has pretty well closed that gap. Everywhere else the 3" advantage is slight, and handloading shotshells can provide some pretty good 2 3/4 inch fodder.

how about some entry level reloading ideas for steel shot in 2 3/4 without breaking the bank. i've been thinking of starting to load my own but son"t know were to start or start with.

That question really belongs on the Shotshell Reloading Forum. The bottom line, however, is you need different wads, maybe different powders, plus steel shot. With the prices of steel shot ammo dropping, it may no longer be cost effective.
