If you want to get your thumb on the hammer without a spur... medium.  That should work for scopes up to 50mm obj on the regular rifle barrels.

I have Leopold and had to go with the high mounts to fit my 50mm.  But that was for my 204 bull barrel.

Or you mount the scope relatively further forward than I do... the center of my zoom ring is about 1/2" back of the trigger.

I have never had a problem getting my thumb under the scope to get to the hammer, and if I did I would put a extension on the hammer, but that was not needed.  :D

before you decide on what hight rings stay  on a hunting gun. put your hunting gloves on and test and make sure your thumb still fits.
on one of my range barrels I have a set of med. rings and I have little trouble cocking the hammer but if I put on a set of insulated  hunting gloves I could not get my thumb in that little space
