Most knife companies offer a selection under or at that price. Ka-bar, Bark River, A.G. Russell at his site, a large number of the internet knife purveyors and many custom makers; there's so many that it's hard to even think of a name right now. Probably what's more important is what you get in the way of materials for your money. Stay away from unlabeled steels, i.e. "surgical stainless" is not a good steel.......or just the word stainless. If the company is using a good steel, they'll state the type. Some of the best stainless ones that you'll encounter in that price range are CPM S-30V, 154CM, ATS-34, D-2 and 440C. Of these, with the possible exception of 440C, unless they have been cryogenically heat treated you will end up with a fairly ordinary steel and are just paying for the name. S30V that hasn't been cryo'd isn't much better than 440c etc. Other steels are adequate also.....but a bit lower in edge retention(usually) areThe various AUS steels(6,8,10). 440A and B are probably as low as I'd care to go, and then for $200 you can get better. Stay away from the bead blasted blades unless you like to own stainless that rusts. I'll not go into the metallury of that. Coated blades tend to lose their coatings if used hard, and serve no purpose I can figure out on a stainless hunting knife.
If you like carbon steels, then 1095, or one of the proprietary versions of 0176/50100-b such as Carbon V or other dramatic sounding names are good steels. A-2 is even better. Bark River offers many models in that steel, but I've never handled one of their knives so have no idea how well they work. Many of the factories offer coated steels in carbon steel, but again they wear off, when used for any length of time, look ugly(to me) and tend to increase blade friction, making cutting with one a tad more strenuous. Eventually, you'll need to protect against rust as they wear away, so why pay for them. Among custom makers, properly forged 1084, 52100, 5160 are steels I'm familiar with that are excellent. However, forgers tend to be expensive.
Handle material is up to you.......it's too subjective a subject to cover; although for that kind of money you should at least be offered Micarta, G-10 and some stabilized woods.
