measuring headspace for an encore.

i've been reloading for some time now, mainly boltactions and necksizing. i just acquired a encore in .260rem. and plan to full-length resize. what is the correct way to measure headspace and adjust your dies for it? any advice?

I fire 3 factory new and use a RCBS precesion mic set. I have found that some used brass from other guns fit tight unless resized back to factory specs.
