Does anybody make 7x57 semi- auto? or re-barrel a 7400 to 7x57?

I'm not aware of any current manufactures.

Some of the old FN49s were chambered in 7X57, though.  Some day if the opportunity and cash present themselves at the same time, I may pick one up.
