Shot mine in the fall on NW Washington, about a 60 degree day. Took 40 minuted to get to him on the hiilside, another hour to gut/transport to my vehicle, 45 minutes home (with 3 bags of ice in his chest cavity), then skinned. Total 2 1/2 hours until skinning began. We had no problems with rancid/gamey meat (I was very careful to remove all fat), and the rug came out perfect, and has stayed that way for going on 4 1/2 years.
Ideally, skinning immediately would be best, but in the Coastal NW climate, and the easy livin' diet the bears there sometimes have, I think you have a little more time than if you filled your tag in Bend, Okanogan or someplace like that. I'm sure others will vigorously disagree, but that is my experience.
