Ground venison

I got "volunteered" to serve on a county committee that will donate venison to those who need food.  This will all be ground meat as there are so many ways it can be used.  We would like to also give out some recipes to help people make the most of this donated venison.  If you would like to share some recipes it will be for a good cause.  It also is good PR for hunters.

ground venison is dry and will not hold together.  Most use pork or beef fat to add moisture.  If you mix your venison 50/50 or even leaner with pork or beef fat it can be used for anything from hamburgers to spagetti, chili, tacos or any thing you would use ground meat for.  The roast or backstrap cuts should be cooked as roasts or steaks for they are the best cuts.  I prefer to cook my roasts with a recipe I found on this site a while ago.  If you respond I will look for the recipe and post it.

deer burger does make pretty good sloppy joes with the mix packets from wal mart.but then my wife says ill eat anything.

 2 lbs. ground venison
 1 med. onion chopped
 minced garlic ( optional)
 1 can ranch style beans
 1 can hominy
 1 can rotel diced tomatoes & chiles
 a little oil
 

 we cook this in dutch ovens with briquets, but can be done in
 oven or stove top.
 Heat do or covered pot with a little oil
 add onions and garlic let cook until clear
 add meat. cook until grey, stirring continually
 add rotel, stir in well
 now, here i throw in a handful of brown rice or barley
 or both
 add canned hominy, stir
 add beans, stir
 cover. we cook about 30 mins. in a do
 in oven i guess about the same at 350
 stovetop maybe simmer for an hour

 variations; use any beans you like. whole kernel corn in
 place of hominy.
 celery, bell pepper, jalapenos, you know what you like.
