Howdy fellas!

Long time no speak!

As the topic suggests, I'm looking for recipes for Oxtail, and liver, not necessarily together. I'm getting a 1/4 of 100% grassfed beef, and I already have one of each of these to try once I have a good recipe.

If you haven't tried it, grassfed beef is some tasty, clean, lean, healthy meat. It costs about the same as buffalo, and is almost as lean, but I'd say it has more flavor. It is best cooked a little slower since it is lean, but I highly recommend it. Once you start on it, regular feedlot beef smells kinda nasty. You open up a pack of grassfed ground beef and you can stick your snoot right into the package and smell nothing but clean meat with a whiff of grass.

Anyhoo, I've never eaten liver, but I'm told this won't be nearly as gamey or strong as feedlot liver. As for oxtail, I suspect I'll be boiling it with celery, carrots, onions, etc. Maybe boil it in vegetable stock, I dunno... Ideas are welcome.


...and Kyote, I'm enjoying a 4-cuber with Bombay Sapphire and garlic-stuffed olives as we speak. Eventually I'll contribute a recipe here that involves food.  ;D

for the oxtail stew or soup ( degree of wateradded) Like the cajuns say when asked what is the first thing you do when you shoot a rhino..... you make a roux.
Make a med mahogony roux, add chopped carrot, celery, onions.  Brown oxtails in oven. add spice to taste add liquid (beef broth is best) and cook long and slow.
Actually a good recipe for Italian veal shanks works good.  check out foodtv.com 
My mom makes cooks them in spagetti sause, that is my favorite meal in the whole world, and I have been around.

for the liver, grill over coals and baste with BBQ sauce.  My wife loves liver, everyone else hates it, that is the best way to cook so it dosen't taste like liver.

my wife maked oxtails in a stewed tomato base with onions, turnips and parsnips, very tasty. As for liver, in my opinion you can't beat the old standard liver and onions with bacon.
