Accuracy? The 700 is a great candidate, just depends on how much you are willing to do.
Truing my last 700 action showed the front face was off .015 from flat. Lapping the lugs is worthwhile.
Adjusting the trigger is a start, I suggest consider an aftermarket replacement. I like Rifle Basix if you are not going for the Jewel.
Start simple, make sure its clean and feed it good ammo. Find our what it likes, both in bullet weight and powder charge. Its not worthwhile trimming necks for a SAAMI chamber, only for tight necked guns. Bedding and pillars are considered standard for high levels of expectations (small groups).
The 700s will shoot great, you can decided what is great for you. Practice is KEY, without it you might as well save the $$$ and effort.
